Signatory Vintage are an independent bottler founded in 1988 by Andrew and Brian Symington. The name ‘Signatory’ was derived from the initial intention to find a person of suitable standing to sign the labels for bottles drawn from a single cask. The first cask bottled was a 1968 Glenlivet which quickly sold through long before any suitable signee could be found.
Signatory currently bottle at three strengths: 43%, 46% Unchillfiltered (UCF) and Cask Strength.To add proof of authenticity to their cask strength bottlings, Signatory always include the cask numbers, date of distillation, date of bottling and number of bottles produced.Signatory Vintage’s aim is to offer as wide a range of whiskies as possible, some of which are not even bottled by the proprietary distillery. This allows malt enthusiast to sample the huge variety of subtle differences which occur between casks.
The Teaninich Distillery produces about 4.4 million litres of spirit annually. Not bad for a distillery you’ve probably never heard of before. It’s the second busiest distillery site in Scotland with the current owners Diageo doubling its capacity and also building a second mega distillery adjacent to Teaninich. Located in the village of Alness which is near Glenmorangie and Dalmore in Scotland’s highlands. The whisky brand Teaninich (pronounced Tee-ah-nen-ik) was named after a district in the area.
This independent bottle by Signatory has been matured in two ex-bourbon Hogshead Barrels for 10 years. The Teaninich distillery is owned and operated by Diageo who use the spirit mostly in their blends. This bottling was distilled on the 22nd of November 2007 and bottled on the 4th of April 2018. It was matured in two ex-bourbon hogshead barrels for 10 years.
Nose: Orchard fruits of apples and pears, vanilla toffee and freshly cut hay, hazelnuts and toasted oak.
Palate: Manuka honey, caramelised brown sugar, vanilla cream sponge with lemon citrus icing sugar.
Finish: Banana ice cream, walnut and vanilla toffee.
