Starward Distillery was created by David Vitale who was looking to create a distillery inspired by Melbourne’s famous temperature swings or ‘four seasons in one day’. The distillery was once situated at Essendon Airport in the old Ansett Hanger but after popularity of the whisky grew the space they had was too small. The distillery was moved to a larger space in Melbourne’s Port Melbourne district in 1996 and production was significantly increased. The distillery makes use of local wine barrels to mature its whisky. Winning international awards and local awards to strengthen its claim as a distillery on the rise to fame.

In a collaboration with iconic Australian winery, Yalumba this whisky has been matured in the world’s only red wine aged in 100 litre octave-sized barrels (Yalumba is the only winery in the southern hemisphere to handcraft barrels in their own onsite cooperage). These freshly emptied casks were filled in 2018 and left to mature till 2021 where they were bottles at 48% ABV with a release amount being undisclosed.

Our Tasting Notes

Nose: Warm banana muffins, honey sweetness and stewed orchard fruits. Hints of berry jam and raisins.

Palate: Boiled lollies and citrus, some menthol with soft berry notes and hints of red wine.

Finish: Medium to long with orange peel, slightly nutty and subtle spice.
