Gin 1
Apothecary Triple Juniper Tasmanian Gin (30ml)
Apothecary Gin is distilled at Killara Distillery in Goodwood by second generation Australian Distiller Kristy Booth-Lark (daughter of Bill Lark). The distillery is the first one in Australia to be owned and operated by a second generation distiller (and a female!). Kristy has over 18 years experience in the industry.
Apothecary Gin is produced using 10 different botanicals (including juniper, coriander, lemon, orange, olive leaf, camomile, lemongrass, pepper-berry) that are each individually distilled in a small copper pot still then married together to create the perfectly balanced gin. However this gin has triple the juniper.
The main botanicals are juniper, coriander, several different types of citrus and some native Australian botanicals. This gives the gin a big juniper hit upfront and is the main flavour coming through to the palate though it is still well balanced with the other botanicals. The juniper is still prominent when mixed with tonic or other mixers. It is 40%abv but the extra kick of juniper makes it seem higher in alcohol. It’s really great to sip on it’s own if you like a big juniper taste or add a splash of your favourite mixer or into a cocktail.
Gin 2
Kavalan Taiwanese Gin (30ml)
‘Above all, I wanted Kavalan Gin to be refreshing and elegant. Imagine taking a dip in a crystal pool on an intense summer’s day. That’s what I had in mind for the experience of drinking Kavalan Gin,’ Chang says on the distillery’s new gin. ‘Being a Taiwanese gin was also very important to me, just like Kavalan whisky is proudly Taiwanese. So I chose a mix of botanicals that could reflect Yilan and Taiwan. Yilan is famous for its zesty kumquats and sweet red-flesh guavas. Taiwanese Star Fruit is succulent, flavoursome and grown across Taiwan – and it’s one of my favourite fruits. Like our whisky, I made Kavalan Gin high in quality and rich in flavour.

This independent bottle by Signatory has been matured in a single ex-Bourbon American oak Hogshead barrel for 20 years. 54.1% abv
