The Lark story is not so much about the distillery but the man behind he distillery and for that matter behind the seed of Australian Whisky distilling as we know it today.

Bill Lark realised that that everything you need for a world-class whisky was in Tasmania – rich fields of barley, an abundance of wonderfully pure soft water, highland peat bogs, and the perfect climate to bring all the ingredients together in a marriage of science, art and passion. The vision of producing Tasmanian malt whisky was born on a trout fishing trip in the highlands of Tasmania. Bill’s father in-law Max produced a wonderful bottle of single malt, and as they enjoyed a drink in the park at Bothwell, surrounded by Georgian buildings, barley fields and the gentle flowing of the Clyde River, Bill remarked to Max, “I wonder why there isn’t anyone making malt whisky in Tasmania”.

Every year Wolf of the Willows select empty Lark casks to produce ale named Wolf’s Imperial Johnny Smoke Porter. The beer is left to season in the casks allowing the beer to take on some hints of the fine Lark spirit. When the casks are emptied they are sent back to the Lark distillery and used to finish the single malt producing this wonderful limited expression.

This year, the single malt that was finished in the beer casks was from the Bothwell Distillery, home of Nant Single Malt Whisky. Nant is world famous for its tropical and citrus notes, the spirit highlights the hop and roasted malt characters left in the casks by the beer, resulting in a Third Edition Wolf Release.

Bottled at 49% abv and full of wonderful fruity, dark toffee and smokey characters.

Our Tasting Notes

Nose: Tropical fruits of mango, lychee and coconut, dark toffee notes, espresso, cocoa and some red fruits.

Taste: Rich dark hot chocolate, red liquorice, stewed banana, roasted coffee beans, deep oak and toasted malt.

Finish: Orchard fruits of apple and pear, figs and dark chocolate with a touch of creamy smoke.
