As one of Scotland’s smallest distilleries Kilchoman can claim that they perform every stage of the production process on-site. Taking water from the nearby Allt Gleann Osamail burn (stream) they produce approximately 120,000 litres of spirit a year. The spirit is then placed inside ex-Bourbon barrels from Buffalo Trace distillery in Kentucky, and first fill Oloroso Sherry hogsheads and butts from Miguel Martin, Jerez, Spain. They often use wine seasoned barrels and rum seasoned barrels in smaller batch releases. When Kilchoman was constructed it was the first new distillery on Islay in over 120 years. Not only a milestone for Islay but for the Scotch malt Whisky Industry.
This 2021 release of Kilchoman’s always wonderful Loch Gorm is a limited edition. The LOch Gorm bottlings are always about bringing the taste of sweet sherry and combining it with Kilchoman’s peaty malted barley. Using 24 Oloroso Sherry butts only 17,000 bottles were created of this very rare and much sought after release. This one is going to go fast and it will always be remembered.
Nose: Smoked Iindian spices of cumin, clove and curry leaf, raisins and sultanas, plums and prunes with toasted almonds.
Palate: Dark chocolate, earthy smoke, lashings of dark fruits and smouldering bonfires.
Finish: Cherry ripe bars, roasted winter chestnuts, medicinal and peat smoke.
