In ancient times, the land around I-Lan in Taiwan was called Kavalan, a mysterious land that was solely inhabited by the indigenous people of the Kavalan clan. The name was officially recognized by the Emperor of the Chin dynasty in the year of 1809 when the original city was also built under the same name.
Kavalan had always been kept primitive and protected from the outside world by the Syue-shan mountain range which is abundant in high quality natural water that comes from deep within the mountain range. The mists of Kavalan and the spirits of the past have been created for you in this exquisite whisky.
The process water is drawn from the springs in the Snow Mountain and Central Mountains imparting a smooth and creamy mouth feel to the whisky. Matured in Oloroso sherry casks in special editions, Kavalan Solist Sherry is bottled by hand at the distillery, without any colouring, chill-filtration, and thus a truly “single single malt whisky” as described by some! It is a naturally smooth and rich whisky with a complex character. Kavalan Solist Sherry was also awarded Best Rest of the World Single Malt Whisky 2011 at World Whisky Awards.
This Kavalan Solist Oloroso Sherry Cask was matured in smaller Hogshead sherry barrels allowing for more contact with wood and more oak influence on the whisky. This has resulted in a nose that’s more refined and a smoother silkier feel on the palate but with much more sherry oak flavour.
Nose: Polished oak, toasted figs, stewed plums, brown sugar, crushed walnuts and some creamy marzipan which plays with some vanilla.
Palate: Luscious berries, dried dark fruit syrup, sandalwood, new leather, dark chocolate and drying oak.
Finish: Long but drying, espresso coffee, dried dates, tinned prunes and soft spiced oak.
