Situated in Hobart, Tasmania this family owned independent distillery was founded in 2014 and started producing in 2015. The distillery has been flying under the radar for quite a while now whilst creating enough stock to supply the high demand the market is throwing at them. Initially released as single cask bottlings the distillery is now concentrating on more consistent offerings. The distillery production is all performed in-house and maturation is predominantly in American oak ex-bourbon casks sourced from the United States. It’s these barrels that give Hobart whisky its edge on other distilleries. Whilst Apera and Fortified wine barrels are more commonly used in the Australian industry Hobart whisky uses the ex-bourbon barrels for initial maturation and then if required applies a finish of another barrel type to create a range of whisky unlike any other in Australia.
Hobart Pedro Ximénez Solera is created using traditional Solera methods. A Tasmanian whisky produced with quality in mind but also consistency. The Devil’s Distillery (as it’s so less commonly known) has a used a Solera system to age their spirit. The Solera system is a process of maturing liquids such as whisky, by fractional blending the juice in such a way that the finished product is a mixture of the sum of its earlier parts, a process that is continued over many years. It’s a labour-intensive exercise that is used to maintain consistency in flavour and a reliable style of whisky over time. This whisky is produced in batches and the alcohol by volume may change per batch. Current batch is bottled at 46.1%.
Nose: Christmas cake springs to min, dates, raisins, sultanas and a hint of ripe green apple. There’s dark toffee and some vanilla with honeydew melon and a sniff of tobacco.
Palate: An oily whisky which releases a rich and chewy feeling on the palate, jam doughnuts, freshly baked puff pastry with a shaking on icing sugar, honey sweetness, dark chocolate and stewed Valencia oranges.
Finish: Long on the end, dark toffee, red fruits, chocolate orange and hints of oak.
