The name Caol Ila comes from the Gaelic ‘Caol Ila’ meaning ‘Sound of Islay’ which is the stretch of water which separates Islay from Jura. The distillery was founded in 1846 and has been very successful through its long history. The distillery draws water from the nearby loch which is surrounded by myrtle and heather. As did most distilleries it closed during the Great Depression from 1930 to 1937 and was reconstructed from 1972 to 1974. Juggling between old traditional methods and modern methods of using new technology. This distillery produces whiskies that have chocolate, citrus and floral notes as well as tangy and peaty, which is typical of an Islay whisky.

This expression of Caol Ila enhances the Caol Ila flavours and gives you delicate smoke that coats the mouth and lingers with a wonderful finish. This must now be an Islay classic and a single malt that keeps on giving which you’ll come back to again and again. Moch in Gaelic means ‘dawn’ and this whisky evokes the dawn of the new day, slowly prising Caol Ila from its slumbers and picking out the shoreline of its little woody bay.

Our Tasting Notes

Nose: Stewed apples and freshly cooked pastry. Lemon zest with freshly cut grass and a delicate smokey reek.

Palate: A wonderful mouth-feel, soft and delicate with the lemon coating your tongue and a bit of sweetness. The peat hits you and coats the mouth which is like a salivating wood smoke and smouldering ash.

Finish: Soft smoke lingers in the mouth.
