Since 2009 Brian Hollingworth and Genise Hollingworth have worked tirelessly to bring their dream to reality. They have formed small husband and wife team who have created a distillery with a rural setting which is climate conducive to aggressive spirit maturation. The distillery has a capacity of producing only 3000 litres of whisky and about 1000 litres of rum per year. To get this into perspective Glenfiddich produce 12,000,000 million litres of spirits per annum. But they’re not trying to create Scotch here, this is something far different, small batch and flavour driven.

Brian and Genise use traditional methods to create their spirit using the highest quality ingredients and casks which are sought after in the industry. 100 litre Sherry and Port barrels, 200 litre ex Bourbon barrels, 100 litre Port and Sherry barrels and 230 litre Port barrels and now they are moving to 230 litre Shiraz barrels.

The distillery is located in Mendooran, Central West New South Wales about 45 minutes from Dubbo. and is the first to be constructed in the area. They offer a unique experience and produce hand crafted spirits at the highest quality.

The whisky is as pure as you will ever find, unfiltered, rested and cared for to create perfection. The distillery is all about integrity and transparency. No colouring and no additives, just great natural spirit matured perfectly to create a wonderful Australian single malt.

This new bottling is a vatting of three 100 litre ex Apera (sherry) casks from McWilliams Winery in South Australia. The barrels were re-coopered by SA Cooperage.

The spirit used was an unpeated Australian pale malt and which was matured for a minimum of 4 years in these three barrels. The spirit when ready was taken from the barrels and combined and left to flock out for 2 months delivering a rich smooth and flavoursome whisky unlike any other that is being produced locally. Highly recommended.

Our Tasting Notes

Nose: Summer Pudding, stewed red fruits, light creamy caramel, hints of Brandy, some orchard fruit undertones, toasted nuts.

Palate: Dark fruits of prunes and figs, dark caramel, burnt toffee, toasted hazelnuts and brandy soaked raisins.

Finish: Sticky toffee pudding and cracked black pepper spice.
