Now here’s a belter of a single malt whisky with a bit of a back story of the casks used to mature the spirit. It’s a Maxwell Wines gemstone, a 1960 Verdelho fortified and left to age in the limestone caves (affectionately known as mushroom caves) at the vineyard for over 40 years until moving them above ground in the year 2000 in an attempt to create an original Spanish Madeira, a fortified Verdelho aged in Spain then shipped to the island for further maturation.
This white port like the Maderia benefitted from change in conditions and resulted in lovely honey notes and a rich oily pallet.
