The Caol Ila Distillery, The name Caol Ila comes from the Gaelic ‘Caol Ila’ meaning ‘Sound of Islay’ which is the stretch of water which separates Islay from Jura. The distillery was founded in 1846 and has been very successful through its long history. The distillery draws water from the nearby loch which is surrounded by myrtle and heather. As did most distilleries it closed during the Great Depression from 1930 to 1937 and was reconstructed from 1972 to 1974. Juggling between old traditional methods and modern methods of using new technology. This distillery produces whiskies that have chocolate, citrus and floral notes as well as tangy and peaty, which is typical of an Islay whisky.
Càrn Mòr is an independent bottling label produced by the family owned and operated Morrison Scotch Whisky Distillers. Morrisons own the Aberargie distillery in Perth, Scotland which is now 3 years old (January 2021). The company was originally started by an ex employee of the independent bottling company Scottish Liqueur Centre when in 2008 he gathered a group of whisky enthusiasts and began bottling and selling whisky. The Gaelic name Càrn Mòr is given to the ninth highest mountain in Scotland which sits on the Northwest Highlands. The English translation is Great Peak.
Released as part of the Strictly Limited range this Caol Ila was distilled in 2012 and sat maturing in ex-oloroso Sherry butts for 8 years. It was bottled by Càrn Mòr in 2021 with only 1365 bottles being produced at an ABV of 47.5%.
Nose: Toasted nuts, red berries, cherry ripe and faint peat smoke.
Palate: The nose breezes through to the palate, now there’s salty notes with cinnamon and clove spice.
Finish: Long with sea salt and freshly cracked black pepper, subtle smoke and Sherry sweetness.
